i am running an event, is about a buffet lunch. I need to find ways that will make people feel full easily, so that they eat less, and we earn more. Any suggestion??

i’d say that it would be best for the majority of the food to be typically ‘filling’ food.
pasta, rice and bread, for example, fill people up quickly, and if there are people with big appetites – like me i must admit! – who perhaps may not fill up on this, you could always make sure that the puddings you offer are very rich and heavy, something like a rich chocolate cake if you’re stuck for ideas, and then i’m sure your customers will leave feeling stuffed to the brim!

Delay the serving of the buffet but put bread rolls and butter on the tables and encourage people to help themselves. Serve a “first course” of soup.
I don’t see how making people eat less will earn you more money. Surely it will just increase the amount of waste. The only way you can save money is to prepare less food, which risks spoiling the lunch because people will think that they have been short-changed.

Why, then, even have the buffet? Either the people get a buffet or they don’t. You could either serve big portions (no buffet) or have a buffet-style, one-trip only set up. To run a half-hearted buffet is a disaster waiting to unfold.

potatos are very filling
donuts are very filling
use those two relatively cheap items to start the buffet !!

Smaller plates I heard will work
Also, put lots of filling food, like rice and beans and bread out.
